Tasting Notes
An elegant and well-balanced wine, this lovely Chardonnay has intense aromas of lemon and kiwi, with overtones of mint and honey. Medium-bodied with superb balance, the flavors of citrus and pit fruit lead to a silky finish. Serve slightly chilled with salmon or chicken. Enjoyable now, it will continue to improve with cellar-aging until 2012. Vintage 2006 The 2006 vintage began with record rainfall, keeping soil temperatures down and delaying bud-break by several weeks. The summer was warm and dry, and the late start to the ripening season allowed for ample hang-time into the fall, resulting in ripe, concentration of flavors. Winemaking Crafted in the traditional Burgundian style, ripe bunches were gently pressed, and the clean juice fermented in barrels. After going dry, we continued to sur-lie age the wine for ten months in the original barrels, by hand-stirring the yeast sediment weekly. The partial new oak and malolactic fermentation enhanced the tropical fruit and creamy texture without dominating the flavor profile.
