Tasting Notes
With intense, jammy aromas of blackberry and cassis, and spicy overtones of black pepper and fennel, the deep, ruby color promises a full and complex taste. The flavors surpass your expectation with layers of berry fruit, coffee and roasted walnuts. Bold and intense yet superbly balanced, the smooth, full mouth-feel lingers into a dark chocolate aftertaste. Will compliment any spicy, red meat entrée such as pork roast or rack-of-lamb. Enjoyable now, or cellar age until 2015. Vintage 2004 The 2004 vintage was at the tail end of a five-year draught, the stressed vines yielding small cluster weight and berry size, resulting in a concentration of flavor. A warm summer and fall led to ample ripening with no mold or weather damage. Sugar, acid and tannins were moderate to high, thus the wine is intense and balanced. Winemaking Two excellent Petite Sirah vineyards were used for this complex and robust wine. The Webster vineyard, on a steep slope in the Adelaida Hills region on the westside of Paso Robles contributes jammy and spicy aromas and incredible body. The DeHaeseller vineyard, in the cool Templeton Gap, offers blossomy aromas and velvety texture. We harvested ultra-ripe fruit from each vineyard, and fermented the must at warm temperatures until dryness in order to maximize color, flavor and weight. The resulting wine is highly extracted with intense aromas and structured tannins. After pressing, the wine was barrel-aged for twenty months before bottling.
